Creamy Vegan Mint and Pea Soup

This mint and pea soup is like a warm hug in a bowl, bright with the fresh flavours of peas and mint, and creamy without a drop of dairy. Served with slices of hearty sourdough, this soup is a plant-based dream come true!

Ingredients:
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 500g frozen peas
- A small bunch of fresh mint leaves, chopped
- 1 litre vegetable stock
- Salt and black pepper to taste
- Vegan cream for drizzling
- Slices of sourdough bread for serving
Method:
1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
2. Add the frozen peas, chopped mint, and vegetable stock to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes until the peas are tender.
3. Once the peas are cooked, blend the soup using a handheld blender or in batches in a countertop blender until smooth. If the soup is too thick, add a bit more vegetable stock or water.
4. Season the soup with salt and black pepper to taste.
To serve:
Serve the soup hot, drizzled with a bit of vegan cream and with slices of sourdough bread on the side.
Additional Tips:
Freshly baked sourdough bread will elevate this dish to new heights.
For a bit of crunch and extra protein, consider topping the soup with roasted chickpeas or toasted seeds.
