Buongiorno, Today we're taking a culinary journey to the sun-soaked region of Tuscany, and guess what? We're taking tofu with us. Bathed in the bright and fresh flavours of cherry tomatoes and a delightful mix of black and green olives, this Tuscan Tofu dish is a celebration of Italian simplicity at its vegan best. Let's embark on this flavourful journey together!

Cooking time: 10 minutes

Total time: 15 minutes

 

Ingredients:


- 400g firm tofu

- 2 tablespoons olive oil

- 2 cloves of garlic, minced

- 200g cherry tomatoes, halved

- 1 cup black and green olives, pitted and halved

- A handful of fresh basil leaves

- Salt and pepper to taste


 

Method:


1. Start by pressing the tofu to remove excess water, then cut it into cubes.


2. Heat the olive oil in a large pan over medium heat. Add the minced garlic and sauté until fragrant.


3. Add the tofu cubes to the pan and cook until golden brown on all sides.


4. Toss in the cherry tomatoes and olives, and sauté until the tomatoes are just beginning to burst, releasing their juices.


5. Season with salt and pepper to taste. Finish with a scattering of fresh basil leaves.


To serve:

Serve the Tuscan Tofu hot with a side of crusty bread or over cooked pasta for a full meal.


 

Additional Tips:


To enhance the flavours, consider adding a sprinkle of dried Italian herbs or a drizzle of balsamic reduction before serving.
