Nothing says comfort like a good pasta dish, and our Vegan Pesto & Steak Fusilli Pasta delivers comfort in spades! Earthy mushrooms and vibrant grilled red peppers mingle with succulent slices of vegan steak, all coated in a rich, homemade vegan pesto. This hearty meal is not only full of fresh flavours but it's easy to whip up, perfect for those busy weeknights when you want a gourmet meal without the fuss. A recipe for vegans, lacto-vegetarians and plant based diets!

Serves: 4


Preparation time: 10 minutes

Cooking time: 20 minutes

Total time: 30 minutes

 

Ingredients:


- 400g fusilli pasta

- 2 tablespoons olive oil

- 4 Vegan steaks

- 2 red bell peppers, sliced and grilled

- 200g mushrooms, sliced


For the vegan pesto:

- 2 cups fresh basil leaves

- 3 tablespoons pine nuts

- 2 garlic cloves

- 6 tablespoons olive oil

- 3 tablespoons nutritional yeast

- salt and pepper to taste


 

Method:


1. Start by cooking the fusilli pasta according to the package instructions, then drain and set aside.


2. While the pasta is cooking, make the vegan pesto by blending the basil, pine nuts, garlic, olive oil, nutritional yeast, salt and pepper in a food processor until smooth.


3. Heat the olive oil in a pan over medium heat. Add the vegan steaks and cook until browned and crispy on the edges, around 5 minutes. When cooked remove the steaks and slice them into strips and put them back in the pan.


4. Add the sliced mushrooms to the pan and sauté until they are golden brown.


5. Toss in the grilled red bell peppers and stir to combine.


6. Stir in the cooked fusilli and the vegan pesto, ensuring all the pasta and ingredients are coated well in the pesto.



To serve:

Additional Tips:


For a touch of heat, sprinkle some crushed red pepper flakes on top of your pasta before serving.
