Who said cabbage was boring? This recipe is here to prove them wrong! A beautiful medley of umami-rich vegan miso, garlic, and roasted cabbage slices makes this dish not only delicious but highly nutritious. Topped with a vibrant homemade red bell pepper sauce, this is not your typical cabbage dish – it's an explosion of flavours in every bite!

Ingredients:


- 1 large cabbage, cut into 1-inch thick slices

- 3 tablespoons of miso paste

- 2 cloves of garlic, minced

- 2 tablespoons of olive oil

- 2 red bell peppers, roughly chopped

- 1 small onion, chopped

- 1 tablespoon of apple cider vinegar

- Salt and pepper to taste



Method:


1. Preheat your oven to 200°C. In a small bowl, combine miso paste, minced garlic, and olive oil. Brush this mixture over the cabbage slices and place them onto a baking sheet. Roast in the preheated oven for 20-25 minutes until the edges are slightly crispy.


2. Meanwhile, heat a tablespoon of olive oil in a pan over medium heat. Add the chopped onions and bell peppers and sauté until they are soft and caramelized.


3. Transfer the cooked bell peppers and onions to a blender. Add apple cider vinegar and blend until smooth. Season with salt and pepper to taste.



To serve:

Once the cabbage is roasted, serve the slices topped with the homemade red bell pepper sauce.

Serve this dish alongside a grain of your choice like quinoa or couscous for a complete, balanced meal.
