400g firm tofu, pressed and cut into 1-inch cubes
1 red bell pepper, cut into 1-inch pieces
1 green bell pepper, cut into 1-inch pieces
1 yellow bell pepper, cut into 1-inch pieces
200g mushrooms, halved
12 wooden skewers, soaked in water for 30 minutes
For the Chipotle Marinade:
3 tbsp chipotle paste
2 tbsp olive oil
1 tbsp soy sauce
1 tbsp apple cider vinegar
2 cloves garlic, minced
1 tsp smoked paprika
1 tsp agave syrup or maple syrup
Salt and pepper, to taste
Method:
