Heavenly Vegan Cheese-Stuffed Filo Pastries with Sesame Seeds and Honey Drizzle. These gorgeous golden pastries are filled with melty vegan cheese and encased in layers of crispy, flaky filo dough. Topped with a sprinkle of sesame seeds and a generous drizzle of sweet honey, these pastries are the ultimate indulgence for your next brunch or special occasion. Serves: 8 pastries

Total time: 40 minutes


 

Ingredients:


- 8 sheets filo pastry, thawed

- 200g vegan cream cheese or soft vegan cheese of your choice

- 50g vegan butter, melted

- 2 tbsp sesame seeds

- 60ml agave syrup or maple syrup (for honey drizzle)


 

Method:


1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.


2. Carefully unroll the thawed filo pastry and place a damp towel over the sheets to prevent them from drying out.


3. Take one sheet of filo and brush it with melted vegan butter. Fold the sheet in half lengthwise, and brush the top with more melted butter.


4. Place a spoonful of vegan cheese near the bottom corner of the folded filo strip. Fold the bottom corner over the cheese to form a triangle, and continue folding in a triangular pattern until you reach the end of the strip. Brush the top of the triangle with more melted butter.


5. Transfer the filled triangle to the prepared baking sheet and sprinkle it with sesame seeds. Repeat this process with the remaining filo sheets and vegan cheese.


6. Bake the pastries for 20 minutes, or until they're golden brown and crispy.


7. Remove the pastries from the oven and immediately drizzle each one with agave syrup or maple syrup.



To serve:

Serve warm and enjoy!


 

Additional Tips:

You can experiment with different vegan cheese flavours or add sweet or savoury fillings like fruit preserves, nuts, or sautéed veggies to suit your taste.
