Ingredients:
- 1 block (400g) firm tofu, pressed and sliced into 1/2-inch thick pieces
- 1 cup vegan breadcrumbs
- 1/2 cup all-purpose flour
- 1/2 cup unsweetened almond milk
- 2 cups marinara sauce
- 1 cup vegan cream
- 2 cups vegan shredded mozzarella cheese
- 1/2 cup vegan grated Parmesan cheese
- 1 tsp Italian herb seasoning
- Salt and pepper, to taste
- Olive oil, for frying
Method:
1. In a shallow dish, place the flour, and in another shallow dish, pour the almond milk. In a third shallow dish, mix the vegan breadcrumbs with salt, pepper, and 1/2 tsp of Italian herb seasoning.
2. Dredge each tofu slice in the flour, dip it in the almond milk, and then coat it in the breadcrumb mixture, pressing gently to ensure the breadcrumbs adhere to the tofu.
3. Heat a generous amount of olive oil in a large skillet over medium heat. Fry the breaded tofu slices for 3-4 minutes on each side, or until they are golden brown and crispy. Place the cooked tofu slices on a paper towel-lined plate to drain any excess oil.
4. Preheat your oven to 180°C (350°F). In a saucepan, combine the marinara sauce and vegan cream, heating it over medium heat until it starts to simmer. Adjust the seasoning with salt and pepper as needed.
5. Spread a thin layer of the creamy marinara sauce on the bottom of a 9x13-inch baking dish. Arrange the fried tofu slices in a single layer on top of the sauce. Pour the remaining creamy marinara sauce over the tofu slices, ensuring they are evenly covered.
