For the Pasta Dough:

- 2 cups all-purpose flour

- 1/2 teaspoon salt

- 3/4 cup warm water

For the Filling:

- 1 cup vegan blue cheese, crumbled (try brands like Violife or Miyoko's)

- 3 cloves of garlic, minced

- 1 tablespoon of fresh chives, finely chopped

- Salt and pepper to taste

For Cooking and Serving:

- Truffle oil, for drizzling

- Vegan butter or olive oil

- Fresh chives, chopped, for garnish



1. In a large bowl, mix the all-purpose flour and salt. Gradually add warm water while stirring until a dough forms.

2. Knead the dough on a floured surface for about 5 minutes until it becomes smooth and elastic. Cover it with a damp cloth and let it rest for 30 minutes.

3. For the filling, combine the crumbled vegan blue cheese, minced garlic, fresh chives, salt, and pepper in a bowl. Mix until well combined.

4. Divide the rested dough into four equal portions. Roll out each portion into thin sheets on a floured surface.

5. Place teaspoon-sized dollops of the blue cheese filling on one sheet of pasta, leaving enough space between each dollop.

6. Gently lay another sheet of pasta over the filling, pressing down around each dollop to seal the ravioli.

7. Use a pasta cutter or knife to cut out individual ravioli. Press the edges with a fork to ensure they are sealed properly.

8. In a large pot of salted boiling water, cook the ravioli for about 3-4 minutes or until they float to the surface.

9. Drain the cooked ravioli and gently toss them with vegan butter or olive oil to prevent sticking.

10. Serve the ravioli on a plate, drizzle with truffle oil, and garnish with chopped fresh chives.


Additional Tips:

For an extra burst of flavor, sprinkle some vegan Parmesan or nutritional yeast over the ravioli before serving.
