Lentil & Courgette Vegan Salad

Today, I'm sharing with you an amazing, fresh salad that's perfect for the warmer months. It's packed with nutritious baby courgettes, lentils, rocket, vegan feta cheese, and dressed with a refreshing mint vinaigrette. This salad is super versatile and great for picnics, BBQs, or as a satisfying lunch. Let's get chopping!

Ingredients:


  • 1 cup green or brown lentils

  • 2 cups water

  • 4 courgettes, thinly sliced

  • 2 cups rocket

  • 1 cup vegan feta cheese, crumbled

  • 1/4 cup fresh mint leaves, finely chopped


For the Mint Vinaigrette:

  • 1/4 cup olive oil

  • 2 tbsp lemon juice

  • 1 tbsp apple cider vinegar

  • 1 small garlic clove, minced

  • 2 tbsp fresh mint, finely chopped

  • Salt and pepper, to taste


 

Method:


  1. Rinse the lentils thoroughly under cold water. In a medium saucepan, bring the 2 cups of water and lentils to a boil. Reduce the heat to low, and let the lentils simmer for 20-25 minutes, or until tender but not mushy. Drain and let the lentils cool slightly.

  2. While the lentils cook, prepare the mint vinaigrette by whisking together the olive oil, lemon juice, apple cider vinegar, minced garlic, chopped fresh mint, salt, and pepper in a small bowl. Set aside.

  3. In a large salad bowl, combine the cooked lentils, sliced courgettes, rocket, and vegan feta cheese. Drizzle the mint vinaigrette over the salad and toss gently to combine.




To serve:

Serve immediately, or refrigerate for 30 minutes to let the flavours meld together.


 

Additional Tips:


You can use any type of lentils in this salad, but green or brown lentils will hold their shape best.


Grilling the courgettes would also work well in this salad if you'd like to add a smoky, charred flavour.

This recipe is naturally vegan, but you can use traditional feta cheese if you prefer.

For a gluten-free option, ensure the vegan feta cheese you use is gluten-free.
