Recipe:
Serves: 4
Preparation time: 15 minutes
Cooking time: 20 minutes
Total time: 35 minutes
Ingredients:
400g penne pasta (choose gluten-free if required)
2 tablespoons olive oil
1 large onion, finely chopped
4 cloves of garlic, minced
1 teaspoon of red chilli flakes (optional)
800g canned chopped tomatoes
100g tomato puree
1 teaspoon dried oregano
1 teaspoon dried basil
150g vegan cream cheese
Salt and pepper to taste
Fresh basil leaves for garnish (optional)
Method:
Bring a large pot of salted water to a boil. Add penne pasta and cook according to the package instructions until al dente. Drain and set aside.
In a large saucepan, heat olive oil over medium heat. Sauté the onion until translucent, about 3-4 minutes. Add garlic and chilli flakes, if using, and cook for another 2 minutes until fragrant.
Pour in the chopped tomatoes and tomato puree. Stir in oregano and basil. Bring to a simmer and let cook for 10 minutes, allowing the flavours to meld together.
Reduce the heat to low. Add vegan cream cheese and nutritional yeast to the saucepan, stirring until the cheese has melted and the sauce is creamy. Season with salt and pepper.
Add the cooked penne to the sauce, tossing to coat the pasta evenly. Cook for a further 2 minutes to ensure the pasta is heated through and infused with the sauce.
Serve hot, garnished with fresh basil leaves if desired.
Additional Tips:
For a touch of freshness, serve with a side salad dressed in a light vinaigrette.
If a thinner sauce is preferred, reserve some pasta water to adjust the consistency as needed.
