Vegan Garlic Butter Roasted Cauliflower Steak

Ever had one of those days where you crave something comforting yet gourmet? I decided to transform the humble cauliflower into a centrepiece vegan cauliflower steak and let me tell you – it’s a revelation. Paired with a creamy cheesy vegan mash and the rich umami from fried mushrooms, it’s like a warm, foodie hug. Dive in with me!

Ingredients:


For the Cauliflower Steak:

- 1 large cauliflower head

- 4 tbsp vegan butter, melted

- 3 garlic cloves, minced

- Salt and pepper, to taste

- 150g mushrooms, sliced


For the Creamy Cheesy Mash:

- 500g potatoes, peeled and chopped

- 50ml plant-based milk

- 3 tbsp vegan butter

- 100g vegan cheese, grated

- Salt and pepper, to taste

 

Method:


1. Preheat your oven to 200°C.


2. Slice the cauliflower head into thick steaks. Combine melted vegan butter and minced garlic. Brush each cauliflower steak generously with the garlic butter mixture and season with salt and pepper.

3. Place the cauliflower steaks on a baking tray lined with parchment paper and roast for 30-35 minutes until tender and golden.

4. Meanwhile, for the mash, boil the potatoes in a pot of salted water until tender. Drain and return to the pot.

5. Add plant-based milk, vegan butter, and vegan cheese to the potatoes. Mash until smooth and creamy. Season with salt and pepper.


6. In a frying pan over medium heat, fry the sliced mushrooms until golden brown.

7. To serve, place a generous scoop of the cheesy mash on a plate, top with a cauliflower steak, and finish with fried mushrooms.

 

Additional Tips:


For an added touch of green, consider serving with steamed green beans or asparagus on the side. Their crunchy texture will add a delightful contrast to the creamy mash.
