Preparation time: 20 minutes
Cooking time: 25 minutes
Total time: 45 minutes
Ingredients:
- 200g dark chocolate (vegan)
- 100g self-raising flour (can use gluten-free)
- 170g caster sugar
- 75g cocoa powder, plus extra for dusting
- 1 tsp baking powder
- Pinch of salt
- 240ml plant-based milk (such as almond or soy)
- 120ml vegetable oil
- 2 tsp vanilla extract
- Vegan chocolate sauce, for drizzling
- Vegan vanilla ice cream, for serving
Method:
1. Preheat the oven to 180°C (350°F). Grease a brownie pan.
2. Melt half the dark chocolate and set aside to cool slightly.
3. In a bowl, mix together the flour, sugar, 75g of cocoa powder, baking powder, and salt.
4. Stir in the plant-based milk, vegetable oil, melted chocolate, and vanilla extract until well combined.
5. Chop the remaining dark chocolate and fold it into the batter for those lava chunks.
6. Pour the batter into the prepared pan and smooth the top.
7. Bake for 20-25 minutes. The center should be slightly gooey.
8. Allow to cool slightly before cutting into squares.
9. Serve each brownie with a scoop of vegan vanilla ice cream and drizzle with vegan chocolate sauce. Dust with a little extra cocoa powder for that final touch.
Additional Tips:
- For a coffee twist, add a shot of espresso to the batter.
- If you like nuts, sprinkle some chopped walnuts or pecans on top before baking.
Allergy information / alternatives:
- For nut-free options, use oat or coconut milk.
- Ensure your dark chocolate is milk-free and, if necessary, soy-free.
